Martinican cuisine is a flavourful blend of African, European and Indian influences. Spicy, fragrant and generous, it is discovered in the markets just as much as in the small seafront restaurants.

The classics to try

Cod accras to start, chicken or goat colombo, Creole blood sausage, avocado féroce or grilled fish: so many essentials to savour alongside rice, christophine gratin or plantains.

The colourful markets

The large covered market of Fort-de-France overflows with spices, infused rums, jams and fruit. It is the ideal place to bring home colombo, bay-rum leaves and vanilla.

Sweets and sunshine fruit

Mangoes, passion fruit, pineapples, guavas and coconut sorbets churned in the ice-cream maker: Martinique is a sweet paradise. Also try fresh cane juice and passion fruit juices.
